Executive Chef Pierre Gabelli was born in Parma, Italy and grew up in Switzerland. He attended Culinary school in Switzerland before joining the Swiss Army as a Medic. After moving to the United States he settled in the state of Washington where he opened his first restaurant, which he ran for 20 years. He then moved to Hawaii and worked as a Chef at a Hilton Hotel.
He later moved to Lubbock to help open Rain Uptown where he was the Executive Chef for 10 years. Chef Pierre left Rain Uptown to open Parma Ristorante Italiano.
Chef Eric Cowan is a native Texan. He has lived in several cities across Texas as well as 6 years in north Carolina while serving in the United States Marine Corps. He served in Operation Desert storm. Eric has had a passion for cooking since he was 13 years old. He received his culinary degree at Augusta Escoffier School of Culinary Arts. Eric has been cooking professionally for many years starting with two different retirement communities. He has also worked locally in Lubbock at Lubbock Christian University, Texas Tech Club, Rain Uptown and the Overton Hotel.
Eric and Pierre became friends at Rain Uptown where Eric completed his culinary externship under Chef Pierre. When an opportunity to open their own restaurant became available, they both decided to take it.
Eric has been married for 31 years to his wife Cindy. They have a daughter, Kaylynn, attending TTU and a son, Cody, daughter in law, Amanda and a grandson Brayden, who live in Fort Worth.
